Bunny Cake by Denise

Shape cakes are something that always intrigued me. I made this Easter bunny cake with my grandchildren. It is as simple as creating regular cakes, cutting different shapes, then recreating the simple to make something unique. The possibilities are endless.

There are so many cakes that can be made from regular shaped cake pans. Often you can make large sheet pans and cut into different shapes to create so many unique cakes. This cake was made with 2 regular round cake pans.

How to Make This Bunny Cake

Mix up your favorite type of cake mix for your bunny cake. It can be either covered with a fondant to create a smooth surface, or you can use regular icing. For this bunny cake I was making it with my grandchildren. My grandchildren are young and I wanted them to help with all the steps, so we used a boxed cake mix that was chocolate. It is a favorite of theirs. We also purchased the icing premade. I figured with six little helping hands this would be the easiest way to complete the task and have it edible for our party.

We mixed up the cake mix according to the instructions on the box. Before we put the cake mix into the pan we set the pan onto parchment paper. Then we used a pair of scissors and made an edged mark on the outside. Then we cut it out and placed it into the bottom of the pan. We still sprayed the pan with Pam, so to help the cake easily pop out after cooking. We also cooked as instructed. When we took the box out of the oven we placed it in the pan on a cooling rack. Once it cools we use a large bread knife and cut the top off to make the cake level.

Next you want to have a nice place to set your cake for your display. Since we were having our celebration and eating the cake right away we created the cake right on the serving plate.

To create the shape of the bunny cake we keep one cake a full circle. The full circle will be the face of your bunny. The other round cake needs to be cut on both sides to make an elongated pointed oval. These oval-like shapes are going to be the ears and the leftover middle piece will become the bowtie.

On the round face and the pointy ears we put a thick layer of white icing. The grandkids helped which makes it super fun. May not look like it's from the store, but with the kids it looks like the best cake ever. We then took some of the white icing and mixed it with food coloring. We mixed green icing for the bowtie and eyes and pink icing for the nose. The grandkids again helped with adding the icing for the eyes, bowtie and nose.

One of the best parts for the grandchildren was adding the candy. I had purchased so many different types of candies. They were all in little dishes and the grandkids were then able to select the types of candies to put on the cake. There were tons of gummies, chocolates, and different types of licorice. They were told the other leftover candies could be put out on top of ice cream. The grandkids think that the M&Ms would be best with the chocolate and the thin licorice for the whiskers. Now as a side note the thin licorice that I had purchased was really tough. I believed that it would be flexible and soft. I’m not sure if this would be the same for any and all small thin licorice. Just something to consider when selecting the different types of candies. If I was to make this cake again I would add more candy on the bowtie.

Cakes are able to bring back fond memories. I often made these shaped cakes when my children were growing up. I often made them for their birthdays. It is such an amazing time to share with those that you love. I can’t wait to try to make all the shaped cakes with my grandchildren now.
