Crossword Cake

This crossword cake was submitted by Roxanne, whose family has five birthdays all within one month. Every year they have a large celebration and the crossword cake is a fun way for them all to celebrate without having too much cake. 

To make this double layer cake, start by preheating the oven while preparing your cake mix. Thoroughly combine the ingredients for chocolate cake mix and pour the batter into two 9 inch Wilton cake pans (spray the pan with oil and place parchment paper on the bottom). Once the cakes are completely cooked (a toothpick comes out clean) place the cakes onto a drying rack. Using a cake leveler, cut off the top of the cake to allow for the cakes to be balanced when stacking.

Place the first cake onto the serving dish and cover the top with a thin layer of chocolate icing. Then, place the other layer on top and cover the whole cake with chocolate icing, using an icing spatula to smooth out the icing. 

To decorate the cake, begin with piping red icing around the top and bottom of the cake with a #353 Wilton piping tip. Next, using a toothpick, draw out everyone’s names on top of the cake for reference. Then, using a #5 Wilton piping tip, ice everyone's names on the top of the cake with orange icing. Finally, around the sides, add fun small candies for extra pops of color.

This crossword cake was submitted by Teresa Ann, whose family has six birthdays very close together. She was inspired for the cake design from the cake above! This cake has the delicious twist of chocolate letters for the birthday names. 

To begin this cake, grease a 9 x 13 inch cake pan and preheat the oven. In a mixing bowl, thoroughly combine cake mix, eggs, vegetable oil, and water. Then, pour the batter into the cake pan, focusing on the corners, which helps so that the cake bakes evenly and it is fairly level on top. Next, place the cake pan into the oven and bake until fully cooked (toothpick comes out clean) and set aside to cool.

This cake used whipped cream in the place of icing. When working with whipped cream it is important to make sure the cake is fully cooled and then place it in the fridge for at least 10 minutes before adding the whipped cream. When ready, add a thick layer of whipped cream onto the cake and smooth it out with an icing spatula. Then, place the cake in the fridge again while preparing the chocolate letters. 

To make chocolate letters you will need semi-sweet chocolate chips, crisco oil, and a silicone letter mold. In a pot on medium heat combine semi-sweet chocolate chips with some crisco oil. When the components are warm, they should have a fairly thin, and smooth texture. Carefully pour the heated chocolate mixture into the silicone mold and wait for it to cool. Repeat this process for the amount of letters that you need on your cake. Once you are finished with all your letters, remove the cake from the fridge and create your crossword.
